This was super easy to make and very very nice! If I can make it, well you can make it too!
You will need :
- 1 fillet of pork (filet mignon)
- 1 onion or 2 if small onions
- 1 pack of Boursin with herbs and garlic
- 1 or 2 rashers of Bacon
- 1 sheet of puff pastry
- 1 egg yolk
- 1 tbsp of French Mustard
- Black pepper and salt
Recipe:
Put a tbsp of olive oil or vegetable oil in a frying pan and cook your thin slices of onion until translucent. It might take you 5 mins.
Preheat your oven to gas mark 6 (180°C)
Meanwhile (keep an eye on your onions, otherwise they burn...I know...I did it too!), lay out your puff pastry. You may have to roll it out a bit so that you can easily seal the pork fillet in it. Place it on a baking tray with a greaseproof sheet underneath so that your puff pastry doesn't stick to the tray!
Once your onions have developed a nice colour, spread them on top of the pork. You can add a little black pepper, and then finish by putting the Boursin on top of the onions. I usually use half a Boursin.
Join the sides of the puff pastry on the top of the fillet and close it! Make sure the sides are sealed too.
To give a nice colour to your pastry, beat an egg yolk, and with a brush, put some all over the puff pastry.
Place on the middle shelf of your oven for about 40 mins. Check it every now and then so the pastry doesn't turn black! If the pastry begins to colour, putting some foil on top during cooking it will stop it colouring further.
When it is cooked, take it out of the oven and allow it to cool for 5 mins before cutting and serving.
Serve it with some Caramelised apple slices fried in a pan and a home made mash :)
